In the kitchen there are only chefs with Javanese roots. They know better than anyone 'how things really are'. Concessions on original dishes, no way. Forget that Nasi Goreng that you whip up yourself at home. Expect regional dishes such as gado-gado, an extensive rice table or put together your own (non-) vegetarian meal. In no time, say 5-10 minutes, the batik-clad waiter will serve it to you. How nice is that if you have a good appetite! Indonesian cuisine is one of preparation.
