In a restful room with views of departing planes, you’ll tuck into delightful dishes like green gazpacho with Dutch burrata; beetroot mille-feuille with dashi beurre blanc and 24-month aged Dutch soy sauce; and cremeaux of pumpkin with passion fruit-carrot dressing, caramel ice cream and milk crisps. The laid-back vibe at this revamped West-side bar-restaurant belies the talent that works here, and Bar Manager Pim Groothuys sets the bar extremely high in his “pursuit of the perfect cocktail”. It’s a pursuit that pays off in his new cocktail menu, which includes the refreshing Oaxaca (€11), a Paloma with Nuestra Soledad Mezcal and rosemary syrup and his sweetly moody Zacapa (€12) with tonka syrup, chocolate bitters and rum.
