There’s even a high-tech greenhouse on the 21st floor of the hotel, which provides vegetables and herbs for the restaurant. Dishes at Persijn include a modern interpretation of a Dutch prawn cocktail, roasted vegetables from mother earth, or a traditional Dutch stamppot (mashed potato dish) with melt-in-your-mouth stewed meat.
