Persijn is located on the ground floor of the brand new, sustainable QO hotel. The restaurant offers stunning, sustainable dishes made from regional ingredients.
To have as little impact on the environment as possible, all ingredients are sourced locally at Persijn. There’s even a high-tech greenhouse on the 21st floor of the hotel, which provides vegetables and herbs for the restaurant. Dishes at Persijn include a modern interpretation of a Dutch prawn cocktail, roasted vegetables from mother earth, or a traditional Dutch stamppot (mashed potato dish) with melt-in-your-mouth stewed meat.
