A new initiative by Swych restaurant in Amsterdam’s NH Collection Doelen hotel is the fantastically simple idea to make vegetables the star of the dish, while fish and meat play a supporting role.

Where vegetables are the star of the dish

The concept is inspired by a new wave of flexitarians: people who forgo meat several nights a week to reduce the impact on the environment. Swych makes the switch easy, with its delectable menu of vibrant seasonal dishes creatively prepared by Chef Rudolf Brand.
